Ingredients

For the Crust:

  • 1 cup low-carb graham cracker crumbs (or almond flour for a keto-friendly option)
  • 2 tablespoons sugar substitute (e.g., stevia, erythritol, or monk fruit)
  • 1/4 cup unsalted butter, melted

For the Filling:

  • 16 oz low-fat cream cheese, softened
  • 1 cup plain Greek yogurt (or cottage cheese blended until smooth)
  • 1/2 cup protein powder (vanilla or unflavored work best)
  • 1/2 cup sugar substitute (adjust to taste)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional Toppings:

  • Fresh berries (strawberries, blueberries, etc.)
  • Sugar-free whipped cream
  • Sugar-free chocolate chips or drizzle

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9-inch springform pan or line it with parchment paper for easy removal.


Step 2: Prepare the Crust

In a medium mixing bowl, combine the graham cracker crumbs (or almond flour), sugar substitute, and melted butter. Mix until the mixture resembles wet sand.

Press the crust evenly into the bottom of the prepared pan, ensuring it’s compact and level. Use the back of a spoon or the bottom of a glass to flatten it out. Bake the crust in the preheated oven for 8–10 minutes, then remove and let it cool while preparing the filling.
